Identifying baking as the chemistry that it is, the host of TV''s GOOD EATS groups recipes by mixing method and provides detailed instruction, excellent recipes, and entertaining commentary. Recipes measurements are given by weight as well as by volume, which ensures greater accuracy and better results -- baking by weight is how the professionals do it, and by weighing your ingredients rather than scooping them you''ll get consistent, professional results at home. Love the peanut butter cookies and the blackberry grunt! And the popover recipe gave me the best results I''ve had in years.
