The title says it all--Meat! It doesn't chicken out or disappoint. Everything about meat (& poultry), with lots of recipes to prove that this is a great resource.

Sure, there are parts of it that the average home cook is never going to do at home, but knowing the ins & outs of butchering & how meat is handled in the right way(s) is something everyone, including home cooks, should have some knowledge of.
